Okay, I just got two thoughts:

Ethel's immigration status might be tricky.

That's an aspect that often gets ignored in stories where a non-human or supernatural being tries to integrate in present day human society...
(That's also the reason I found the idea funny that the Sisterhood actually provided Lorelei the Mermaid with some kind of paperwork!)

@Micro: yeah, in retrospect that’s a pretty boss move to make Lorelei all legitimate and stuff, most magical critters don’t have that sort of support

@Stilldown: of course, the only thing that matters to Donna/Haute Coffee is Ethel’s tax ID number (as an independent contractor). She’s probably using the US equivalent of whatever Egg Imbiss is registered as—Donna’s not paying Ethel directly.
