This is one of those inventions that 1) is a lot more useful in a commercial setting 2) has probably been superseded by ironclad process controls in real quick serve restaurants

However I could see this getting sold a couple decades ago on a half hour long infomercial

-lightly greased small cast iron pan at medium-high heat
-glass lid that can trap steam
-watch until the egg yolk starts changing color

I've played with a few low tech vacuum systems over the years - mostly for filtering things in labs - and suspect there was no major destruction. More likely she added a 'T' connection with a valve. Open the valve with the water on and a vac gets pulled on the line leading to the bell end of the contraption. When you want to break the vacuum pull, you close the valve, turn off the water, and reintroduce air to the system with the pull valve/handle located on the bell end.

Also, if you have a good system that doesn't leak, you only have to run the water for a minute or two. If you get the level of vacuum you need, closing off the valve at the 'T' will get you a static pull at the other end so you don't have to dump hundreds of gallons of water to constantly renew the vacuum.

Okay... Don't know yet how exactly I'll play it out, but I think the author notes in my current chapter's epilogue will inevitably have a link back to this page...

(Gus, Drake or Koganan stuff is one thing - but I never would have thought of fried eggs to be the source of potential continuity headaches I would have to circumnavigate in my writing...)
